A seasonal favourite of mine. At the moment (if you've a good eye for it) you can gather fresh, green cow parsley by the bunch (cut off whole bunches, the plant will be fine). Do it now before it flowers.

Make a stock (pork or chicken is good). Skim off the fat.

Boil some spuds and blend them into the stock. Take the thick bits of stalk from the cow parsley, lob the leaves into the soup, cook for a minute, and blend it in. Season with salt, pepper and nutmeg, and serve with bread. A heavenly wild herb soup.
