Hi,

an impulse buy from the farm shop, the butcher was not there to ask and I can't find a recipie.

I would like to do a roast with apple sauce, any ideas please,

A roast with apple sauce, is best done IMHO with the standard roasting techniques.e.g. scoring the fat, starting of on as high as the oven goes for 23-30 mins, reducing to 160 for the remaining cooking time.

Personally with a shoulder I'd be more inclined to a red roast pork chinese style. A similar recipe to the one I use is on this page:

With apple juice, cyder vinegar, salt and pepper and soy sauce, didn't have any five spice so used salt and peper instead.
proper local apple juice though -cox's oringe pippins

We say

"thank you, that was totaly yummy"

and we have leftovers for tomorow
