Just got a small turkey crown this year (5lbs). I'm worried that it will be very easy to dry it out - any cooking tips?

Cheers

I'd imagine the bacon wrapping stuff works well but I just use loads of butter on top and underneath the skin, and don't cook too long a crown cooks quite quickly (sory no idea on times)

We did a crown wrapped around a gammon once as an experiment, ended up not to good. Falls in the the basic trap, that things need their own cooking times. Combine to your peril.

Wrap it in bacon, or if you want crispy skin, wrap in a muslin which you've soaked in melted butter. Remove it for the last twenty minutes.

Thanks - think I'll go for the crispy skin. Making me hungry just thinking about it!

I like the sound of the crispy skin too.
