When you cold smoke -- it is important to rest what you have smoked for a day or so to let it mature.
I cover salmon with grease proof paper and keep in the fridge
(or I put two side flesh to flesh and wrap)
Its amazing what improvement you get from a days resting.
Jema's article on shortening times is right -- most people want to smoke for flavour, not for preserving.

Thanks for the input, I have heard about resting but have not tried it yet.

I must admit I feel a bit cheeky writing about smoking, but then decided I was inspired into smking by HFW, and in all honesty I think he writes about smoking having had even less experience than me! So why shouldn't I write?

But of course no one here writes an article and lays claim to that area of the site as their own province. If anyone else should happen to write something better, it would take pride of place not that i'm hinting
