Having 2 birthday cakes to create this weekend, I have some left over butter icing, and some left over now solidified dark chocolate ganache (choc and cream only). Heat ganache, add butter icing and use on fairy cakes yes or no. If no they why!

ganache is ace in macarons and i see no reason not to include some with butter icing in the middle of two layers of ganache

my feeling about cup cakes is why?imho they are too small to cook or keep well and rather wasteful of paper cupthings,

I'm not going to make anything complicated as I have 2 batches of playdough to make for sunday school and a bbq for 40 tomorrow along with all my husbands presents to wrap! And we're out this after noon. I can make cup cakes in my sleep.... mini ones maybe.... and take them to church or keep for the bbq and they will be enjoyed. Oh adn i have silicone thingys!

the silicone thingies are ace (and available in macaron shape )if the cupcakes are for very soon that is probably a good idea

ive had too many dried out horrors to be objective about the wee pests perhaps

if you seal the tops completely with icing, and leave in their cases, they stay moist.

that's my excuse for the hefty layer of icing anyway.

Strangely I find fairy cakes easier to cook than a full sized cake. Ive never had a problem with them drying out too quickly either. Admittedly if the last one gets forgotten its probably slightly drier than the last slice of cake would be after the same length of time but that's usually after more than long enough to say they've kept well. Maybe I find them easier because they were the first thing I learnt to bake.
