We had this yesterday with lamb. I think with a couple of changes, it would be a good veggie dish. Also helps with the courgette mountain.

2 tbsp duck fat
3 onions
180g basmati rice
7 medium courgettes
500ml hot chicken stock
4 heaped tbsp creme fraiche
150g finely grated cheddar or emmental
salt and pepper.

Preheat the oven to 190/375/gas5, Get a large frying pan on a low heat, add duck fat and a splash of water. Once melted and hot, add the finely sliced onions and cook for 20mins.
When the onions look ready, add the rice and the courgettes to the pan, stir well, then add stock. Cook for 5 mins.
Take the pan off the heat and gently stir in the creme fraiche and 100g of the cheese. Season to taste.

Lightly oil a roasting tray/gratin dish.Tip everything into your prepared tray, roughly flatten it out ans sprinkle over the remaining cheese.

Bake for approx 40 mins.

Delish.

I'm going to give this a try this week.... maybe with a bit of chopped chilli in it.

I made this yesterday and it was delicious. I added some chilli and some smoked mackerel.

It was super fresh mackerel we had caught and smoked ourselves... not at all like the horrible rancid shop bought stuff!
