I use brown castor sugar for this recipe as it gives a much nicer flavour:

Cinnamon Plum Cake

Ingredients

• 150g caster sugar
• 115g butter, at room temperature
• 140g plain flour
• 1 teaspoon baking powder
• 3 eggs
• 1 tbspn milk
• 1 pinch salt
• 8 to 12 plums, pitted and halved (depends on size)
• 1 teaspoon ground cinnamon or to taste
• 1-2 tablespoons caster sugar, for sprinkling

Directions
1. Preheat oven to 180 C / Gas 4.
2. Beat sugar and butter until fluffy with electric mixer. Mix flour and baking powder and sift into creamed mixture. Beat in eggs and salt. Mix everything well.
3. Spoon batter into a greased 26cm round springform tin and smooth out. Top with the plums (cut side up) and sprinkle with 1-2 tablespoons sugar and cinnamon.
4. Bake in preheated oven on lowest shelf for 40-50 minutes or until a skewer comes out clean. Cool to room temperature or serve warm.

I'm awash with plums.

Pleased to hear the chutney worked well! I'm looking forward to trying it with some cheese once it has matured a bit. Yummmm

Revisited! I don't think I got around to making this last year, but I did last night

It's lush! I put half straight in the freezer but OH and I have eaten all the other half today!

I added a tsp of ground ginger and 1/2 tsp cinnamon with the flour as we like those flavours. I think my cake mix may have been a bit loose as the plums sank to the bottom, but as it wasn't a very deep cake (in a 24cm tin) it didn't really matter. I assume in the 26cm tin the plums would barely be covered by the mixture. The texture was superb - and I have enough plums to make another cake tomorrow

Been given some plums by a lovely neighbour and just finished making this with your ginger and cinnamon additions to the flour. Smells divine!
