Carrot Cake
6 oz s b sugar
1/4 pint sunflower oil
3 eggs
7 oz wholemeal flour
1 tbsp mixed spice (I add more as I like spicy stuff)
1 tsp bicarb
8 oz carrots
6 oz sultanas
Beat sugar,oil & eggs til smooth.Fold in flour,spice and bicarb.Fold in carrots and sultanas.Bake for 1 1/2 hrs on a 170 c oven. (bakes a bit like a bread pudding long and slow )Cover top with foil if it catches.

Apple Braid (I normally whip this up in the breadmaker for speed)
4 fl oz milk
1 egg
3 tbsp butter
4 tbsp sugar
1/2 tsp salt
10 oz bread flour
2 tsp yeast

Filling
2 apples
1 tsp flour
2 tbspn sugar
tspn m spice
i/2 tspn lemon juice
2 tbspns raisins

Put all ingredients for the dough into the breadmaker on dough setting or make up by hand and leave to rise.Make up the filling by chopping the apples and tossing into the remaining ingredients. Punch dough down and roll out into a rectangle.Place the filling down the centre top to bottom and make slashes on each side of the dough so you can plait it.Cover loosely rise for an hour then bake 180 c /350 f gas 4 for about 35 mins til golden...beware this ones addictive!!!

Duly printed, and will report back later this week. Have you tried freezing it? I usually freeze cakes in one man portions to stop me scoffing the lot.

Do you ever ice the carrot cake? I love the lemon frosting type stuff it comes with but have no idea how to make it at all.

Both freeze really well thankfully I tend to cook the carrotcake recipe x 3 in my loaf tins,slice them all up when cool and store in the freezer out of temptations way for the boys packed lunches,that is unless the neighbours smell me baking... The apple braid freezes well we're having some for pudding tonight just letting dinner go down first so there's room for a dollop of custard with it!You can warm it up or have it cold its gorgeous both ways.I'll hunt out the icing recipe for the carrot cake too I'm like most people on here and have a mountain of cookery books

carrot cake topping is cream cheese and icing sugar, made like butter cream.
