Made this today which was nice with the roast lamb. I think a bowl of it would be good if you were having a barbie too.
2 handfulls of wild garlic leaves
Some olive oil
Some capers

Whizz it all up in a liquidiser, adjusting quantities until you're happy with the consistency. Apparently it will keep for a while in a jar in the fridge if you put a layer of oil on top of the sauce.
I also thought it might be good if you used half-and-half wild garlic and mint.

now that sounds really nice.................i know where there are tons of wild garlic plants along the river and may give that one a try
