I have just made a couple of 5 gallon batches of wine in my fermenting bins.
I have not snapped the lids shut, just pressed them shut, I am hoping the escaping Co2 gas will stop any incoming vinegar flies etc etc.
Does anyone else do this ? or do you use an air lock on a closed lid ?

That's exactly how I do it, with no particular care.

I tend to just lay the lids on top, too, with a cloth draped over the lot. Snapping them on will only make them pop off when the pressure builds up, and as CO2 is heavier than air, it will form a blanket over the wine.

I use big buckets with carrier bags stretched over the top.

That's fine for the first 2 or 3 days whilst the initial fasst fermentation takes place then I would suggest your wine is moved to a vessel with an airlock.
