I'm sitting here fairly merry after a glass or two of kir (white wine four parts, cassis one part). It's great.

How do you make cassis?

Not entirely sure, it's officially a liqueur and I think originally it may have been made with blackcurrent, sugar and alcohol in the form of a fruit brandy.

But, I may have just made the worlds poshest (even the word sounds drunk) cider and black.

By maceration as far as I remember. Vodka would probably be the best base for domestic production.

This could make an interesting project, I wonder if the blackcurrants are added whole or crushed?

We will need to make some guesses on sugar content.

Now that would be lovely - redcurrant cassis. I need more fruit bushes. At least the PYO do them.

That is something I definitely am going to try!!!!! Although right now I am still recovering from the effects of last night's blackberry vodka (I didn't get to bed till 6am - didn't think I could still do it!!!)
