Tahir's unlikely to be using any ham recipes any time soon, so I wouldn't worry about his remarks.

you are curing them in coke first that could be interesting, how long do you leave them for? and how do you then cook them

It is a two-week cure, the recipe came from the sausagemaking website. The brine is about 15% coke. i suppose if you steeped it in coke only you would have nothing left at the end!

I saw the recipe in one of Nigellas books, I'm tempted to try it based on this review

I saw it too, it is in the 'Trashy' chapter, from which I tried the sweetcorn bake thingy - absolutely gorgeous it was. Actually, would go really well with a ham...

I would definitely recommend it, it is very nice

she recommends using the left over liquor for a black bean soup but I have never tried that

Have you still got the liquor? We might have some blackbean paste in the fridge.

It sounds so intriguing, next time I get a ham from the butchers I will give it a go

Have I ever mentioned what a pain buying meat is round here

Why don't you get a nice leg of pork and make your own ham.
