I agree with the others even painted or varnished ply will start separating after a few years if you dont keep refreshing it. Timber would be better.
If you do have to use ply a good WBP ply would be ... |

From memory I seem to remember it has a brace at the back about 4 inches wide just above the base and 2 across the top 1 front and 1at the back, not a solid top |

I've never gone that technical ( just put in bucket till fermantation finishes then bottle ) . I just add half a teespoon of sugar to a bottle when bottling up. |

The holly is prone to splitting and cracking during seasoning and will be hard to work. Ash would be easier to work and seasons better.
You will find it easier to carve/whittle it wet.
