I always weigh my water too and the results are much better. I often put a bowl of boiling water in the bottom of the oven before cooking and it helps to keep the top of the bread from hardening off ... |

Not done the dolly tub bread but the undercover bread,where the dough is cooked with a bowl over it, is really great and absolutely enormous when it is finished. A real work of art,shame to cut it!

I am on my second copy of this book. I bought it when it first came out and it taught me to make bread . Now I have a bread maker but still go back to it 'for fun' sometimes.

I make a big batch of cheesy bread sticks rolled in sesame seeds at the beginning of the week and they are great for when the kids come home from school or work. |
