Poor advice about "stopping" fermentation.

Most brewing yeasts are capable of about the 12% ABV level, most wine type yeasts will do more.

Hell, even bread yeast can do about 12%.

Looks good. If you haven't got a pasteuriser and you don't want any oxidation over time, then it's often best to add a little ascorbic acid (vitamin C) before freezing.......

Erm.........

When you're mixing the must etc, try to get as close to about 1.080 as possible, so when it ferments dry, you should get around 12% ABV.

Don't forget, if you're worried about your chillies going off, you can always just trim the stalk, then whiz them in a processor, then put them in a kilner type jar and top it up with vodka.
