Got some 4 week old chicken stock in a pan the fridge, bin it or is it still OK? Smells OK.

I'd bin it after four weeks, and I'm pretty slapdash about food hygiene.

Is it ok to have stock/soup in the fridge and boil it up everyday to keep it edible?

This was hotly disputed last time it came up, the majority was (strongly) against this.

If it was nicely gelled and the surface was protected by a layer of fat, and it hadn't been hanging around long before going into the fridge - I admit I'd be tempted to use it.
But I'd see that it got thoroughly boiled up first.
And there's no point in using it if it didn't *taste* good...

But for ordinary chicken stock, is it worth bothering about? Probably best not to take any chances if feeding it to others.
However, if it was something unusual, it might be worth the effort to do a food taster 'guinea pig' act, and then use it!

I was just remembering an hotel kitchen job that I had many many years ago. There was a big stock pot about the size of a dustbin which was reheated every day. One day a minor explosion (I can't recall why) brought some ceiling plaster down into the stock pot, and Chef said "oh just stir it in - they'll think it's truffles". This was a very top hotel in one of our touristy cities. (I could tell other stories....)

If its stored in the fridge in the mean time, then its okay ish to do it. If it hasn't been thoroughly chilled every day then it really isn't okay.

I wouldn't reheat stock more than a couple of times though, even chilled.

As for the four weeks in the fridge, that isn't only likely to be off but it could be monstrously dangerous, I think Tahir has made the right decision in chucking it!
