Just a query, could you use honey to make jams?

I believe so, though the set tends not to be as good. Honey is approximately 75% sugar 25% water, so you need more honey than sugar, but you're adding in some water at the same time.

There's a recipe on here for lemon curd made with mostly but not entirely honey. I've eaten jam made with honey...and also I think jam made with milk! (which now I think of it must have been like dulche de leche).

Would be quite a different taste, but surely the keeping qualities would be good with honey?

I wonder if you could flavour honey with herbs/flowers (I know you get honey primarily from herbs/flowers but wonder if you could make a stronger flavour?)

There's a rose petal conserve called gulkand which is available in soime asian grocers, if you like rosewater then this is for you. Good idea though Bugs.

You can (not sure how you'd do it tho - My mother brought me back a selection of flavoured honeys from Greece when she went on a cruise round the med

The Pistachio one was divine although looked a hideous green colour - there was also an almond one which was lovely as well

If you can get the bees near to an extensive crop of 'something' they will usually concentrate on it. Ours made a lovely stripe of 'treacle toffee' honey a couple of years back when something interesting was in bloom. Sadly we never worked out what. The lavender 'stripe' in the combs is often identifiable by taste though!
